Ingredients
- 1 lb. baby lima beans
- 2 medium potatoes, chunked
- 1 ham hock, chunked
- 1 tsp. thyme
- 2 tsp. ground oregano
- 2 Tbsp. salt
- 2 Tbsp. fine ground black pepper
Method
- Soak beans overnight or cover with water 2-inches above beans and bring to boiling.
- Boil them for 3 to 4 minutes, then let them sit for an hour.
- Drain the water and refill to 2 to 3-inches above beans.
- Add all other ingredients, except potatoes.
- Bring to boil, then simmer for 30 minutes.
- Add potatoes and cook until potatoes are done.
