Ingredients

  • 1 lb. baby lima beans
  • 2 medium potatoes, chunked
  • 1 ham hock, chunked
  • 1 tsp. thyme
  • 2 tsp. ground oregano
  • 2 Tbsp. salt
  • 2 Tbsp. fine ground black pepper

Method

  • Soak beans overnight or cover with water 2-inches above beans and bring to boiling.
  • Boil them for 3 to 4 minutes, then let them sit for an hour.
  • Drain the water and refill to 2 to 3-inches above beans.
  • Add all other ingredients, except potatoes.
  • Bring to boil, then simmer for 30 minutes.
  • Add potatoes and cook until potatoes are done.
