Ingredients
- 6 egg yolks
- 1 cup cottage cheese
- 3/4 cup light cream
- 3 tablespoons finely chopped parsley
- 6 egg whites, stiffly beaten
- 1 1/2 tablespoons butter
Method
- Beat together egg yolks, cottage cheese,cream and parsley. Add salt and pepper to taste. Fold in beaten egg whites. Heat butter in oven safe skillet, add the mixture and cook over low heat until bottom is set. Transfer the skillet to a 350 degree oven and bake for 15 minutes or until omelet is set and is lightly browned.
