Ingredients

  • 2 1/4 lb corned beef
  • 1 None onion, chopped
  • 1 tbsp brown sugar
  • 1 tbsp vinegar
  • 3 None cloves
  • None None roasted tomatoes, to serve
  • None None pickles, to serve
  • None None vegetables, to serve

Method

  • Rinse beef and place in a large saucepan with onion, sugar, vinegar and cloves. Add enough water to cover. Bring to a boil over high heat. Reduce heat to low and simmer, covered, for 1 hour 15 mins, or until a skewer inserted is easily removed.
  • Serve sliced with roasted tomatoes, pickles and vegetables.
