Ingredients
- 1 c. flour
- 1 c. cornmeal
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/4 c. sugar (if desired)
- 2 eggs
- 1 c. milk
- 1/4 c. shortening or oil
Method
- Mix dry ingredients.
- Add eggs, milk and shortening.
- Beat until smooth.
- Do not overbeat.
- Pour into greased 8-inch round or square pan or cornbread skillet.
- Bake at 425° for 35 to 40 minutes.
- Yields 4 to 6 servings.
