Ingredients
- 2 cans corn
- 2 large vine ripened tomatoes
- 1 cup fresh soft mozzarella cheese (chopped)
- 3 leaves fresh basil, large
- 34 cup balsamic vinegar
- 18 cup olive oil
- salt and pepper
Method
- chop mozzarella into 1/2 inch cubes.
- tear basil leaves into 1/2 inch pieces.
- chop tomatoes into long slices.
- mix all ingredients into a large serving dish.
- salt and pepper to taste.
- tastes best if chilled in fridge for an hour.
