- 1/4 c. margarine, melted
- 2 (17 oz.) cans whole kernel corn
- 2 Tbsp. green pepper, chopped
- 3 Tbsp. pimiento, chopped
- 3 Tbsp. onion, chopped
- 1/2 tsp. curry powder
- 1/4 c. sour cream
- 1/2 tsp. salt
- freshly ground pepper
Method
- Combine margarine, vegetables and curry powder in a skillet. Cook over low heat for 8 to 10 minutes or until vegetables are tender.
- Stir in sour cream and pepper.
- Heat thoroughly, stirring often; do not allow to boil.
- Yields 6 servings.
