- 1/4 c. green pepper, chopped
- 2 Tbsp. chopped onion
- 1 lb. lean ground beef
- 2 Tbsp. vegetable shortening, melted
- 1 (12 oz.) can yellow whole kernel corn, do not drain
- 1 (16 oz.) can tomatoes
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. soy sauce
- 1 c. elbow macaroni, uncooked
Method
- Brown green pepper, onion and ground beef in melted shortening in heavy frypan.
- Stir in corn, tomatoes and seasonings.
- Cover and simmer over low heat for 20 minutes, stirring occasionally. Uncover, stir in macaroni; simmer an additional 10 minutes or until macaroni is tender, stirring occasionally.
- Yields 4 to 6 servings.
