Ingredients
- 1 medium size onion, chopped
- 1/2 bell pepper, chopped
- 1 pkg. Mahatma yellow rice
- 2 cans Mexican corn
- 2 cans cream of mushroom soup
- 1 c. butter
- 1 c. water
- 1 c. grated cheese
Method
- Saute onion and bell pepper in butter in large cooking dish. Add 1 cup water; bring to boil.
- Add rice.
- Cover and let stand 5 minutes.
- Add corn and cream of mushroom soup.
- Sprinkle top with grated cheese.
- Bake in 350° oven 30 minutes.
- Salt and pepper to taste.
