Ingredients

  • 8 oz. salt pork, sliced
  • 2 onions, chopped
  • 1/2 c. chopped celery and tops
  • 3 Tbsp. chopped green pepper
  • 3 Tbsp. finely diced carrot
  • 1/2 bay leaf, crumbled
  • 2 Tbsp. flour
  • 4 c. water
  • 3 c. diced potatoes
  • 1 can (16 oz.) creamed corn
  • 1 c. whole corn
  • 2 c. evaporated milk
  • 1 lb. shelled shrimp, cooked
  • salt and pepper

Method

  • Fry pork until crisp.
  • Remove from grease and pour off all but 3 tablespoons.
  • Add next 5 ingredients and cook 5 minutes.
  • Blend in flour.
  • Add water and potatoes.
  • Bring to a boil and simmer 15 minutes.
  • Add corn, milk and shrimp.
  • Heat well, but do not boil as milk will curdle.
  • Season with salt and pepper.
  • Add pork.
