Ingredients
- 1 can black pinto or kidney beans
- 1 (8 oz.) can corn
- 1 c. chopped green or red pepper
- 1 onion, chopped
- 1/4 c. cider vinegar
- 2 tsp. olive oil
- 1/2 tsp. pepper
- 1/4 tsp. salt
- 1 tsp. chili powder
Method
- Drain and rinse beans.
- Drain corn.
- Mix together with pepper and onion in a refrigerator bowl.
- Combine remaining ingredients with wire whisk; pour over veggies and stir to coat.
- Cover and refrigerate overnight.
