Ingredients

  • 11 ounces pasta
  • 5 tablespoons butter
  • 4 tablespoons flour
  • 1 cup heavy cream
  • 1 cup milk
  • 4 ounces white cheddar grated Vermont
  • 4 ounces American cheese white
  • pepper

Method

  • Stir in milk and cream. ( I have found doing this in the microwave in 1 minute increments, helps prevent scorching of the milk. I usually heat for 1 minute then whisk for 1 minute, and repeat until the desired thickness is achieved)
  • When desired thickness is acheived, slowly stir in cheeses.
  • Pour over cooked pasta.
