Ingredients

  • 4 clove garlic, peeled
  • 5 slice bacon, cut into 1/2 inch pieces
  • 2 lb potatoes, peeled and cut into 1 inch cubes
  • 1 cup very thinly sliced green onions
  • 1/2 cup milk, warmed
  • 1/2 cup sour cream
  • 1/2 to 1 teaspoon salt
  • 1/4 tsp pepper

Method

  • In a large pot, immerse the potatoes and garlic in water.
  • Boil until the potatoes are fork tender, about 30 minutes.
  • Fry the bacon in a skillet until crisp.
  • Drain on paper towels.
  • Pour out all but 1 teaspoon of the bacon drippings from the pan.
  • Add the green onion to the drippings, and saute' until soft but not brown.
  • Return the bacon to the skillet and stir to combine.
  • Drain the, potatoes and garlic and return to the pot.
  • Mash the potatoes with the milk, sour cream, salt, and pepper.
  • Stir in the bacon and green onions.
  • Reheat, if necessary, before serving.
  • *If you have already cooked bacon, saute' the green onions in a bit of butter in place of the bacon drippings.
