Ingredients

  • 1 whole chicken with liver
  • 4 to 5 cubes Knorr chicken bouillon
  • 1 c. North Carolina rice
  • 1/2 bunch celery
  • 2 good size yellow onions
  • salt to taste

Method

  • Cook chicken in large soup pot filled with water to cover chicken for 1 hour or until done along with 4 chicken bouillon. After cooked, remove from pot and place in colander in drainer to cool.
  • While chicken is draining, take the water left in pot and add rice, celery (chopped small) and onions (also diced) and cook until done, about 20 minutes.
  • Debone and skin chicken and add it to the rest; salt to taste.
  • Heat through and you have Cookie's Homemade Soup.
