Ingredients
- 8 baking potatoes
- 1/2 c. butter or oleo, divided
- 1 c. shredded zucchini (1 small)
- 1 jar chopped pimentos, drained
- 1/2 c. hot milk
- 1 1/2 tsp. salt
- 1/8 tsp. white pepper
- 2 Tbsp. grated onion
Method
- Scrub potatoes; prick each with a fork and bake in a hot oven at 450° about 45 minutes.
- Cut slice from top of each potato and scoop out center, being careful not to break skins.
- Add milk, 1/4 cup oleo or butter, salt and pepper to hot pulp and mash until light.
