Ingredients

  • 4 veal schnitzels
  • 4 slices bacon
  • 2 tomatoes, peeled and sliced
  • 4 slices cheese
  • 4 lettuce leaves
  • 4 burger rolls
  • 1 tablespoon freshly ground coffee
  • 2 teaspoons golden brown sugar, packed
  • 2 teaspoons fresh ground black pepper
  • 12 teaspoon ground coriander
  • 12 teaspoon dried oregano
  • 12 teaspoon fine sea salt

Method

  • Place the coffee, sugar, black pepper, coriander, oregano and salt together in a bowl and mix until well combined.
  • (This mixture will keep in an airtight container in the fridge for a couple of weeks).
  • Rub each slice of veal liberally with coffee rub on both sides.
  • Allow to marinate for at least half an hour.
  • Heat a char grill plate and toast the rolls until nice and crispy then grill the bacon and marinated veal for 4-6minutes, then place the bacon on top of the veal and top with a cheese slice.
  • Layer the burger roll with lettuce, tomatoes and cooked veal and serve.
