Ingredients

  • 1 large onion, chopped
  • 1 large green pepper, cut in strips
  • 1 large clove garlic, minced
  • 2 Tbsp. oil
  • 1 can (16 oz.) tomatoes, cut up
  • 1 small bay leaf, crumbled
  • 1/2 tsp. each thyme and salt
  • 1/4 tsp. pepper
  • 1 lb. frozen cod or other fish fillet

Method

  • In large skillet over medium heat, saute onion, green pepper and garlic in oil about 5 minutes or until tender.
  • Stir in tomatoes, bay leaf, thyme, salt and pepper.
  • Cover and simmer 15 minutes.
  • Meanwhile, let fish stand at room temperature to thaw slightly, then cut in 1 inch cubes.
  • Add to sauce.
  • Cover and simmer 10 to 15 minutes or until fish flakes easily with fork.
