Ingredients
- 1 large onion, chopped
- 1 large green pepper, cut in strips
- 1 large clove garlic, minced
- 2 Tbsp. oil
- 1 can (16 oz.) tomatoes, cut up
- 1 small bay leaf, crumbled
- 1/2 tsp. each thyme and salt
- 1/4 tsp. pepper
- 1 lb. frozen cod or other fish fillet
Method
- In large skillet over medium heat, saute onion, green pepper and garlic in oil about 5 minutes or until tender.
- Stir in tomatoes, bay leaf, thyme, salt and pepper.
- Cover and simmer 15 minutes.
- Meanwhile, let fish stand at room temperature to thaw slightly, then cut in 1 inch cubes.
- Add to sauce.
- Cover and simmer 10 to 15 minutes or until fish flakes easily with fork.
