Ingredients
- 1 unbaked 9-inch pie shell
- 1 c. cooked pinto beans
- 1 c. sugar
- 1 c. dark corn syrup
- 4 eggs
- 1/2 c. shredded coconut
Method
- Preheat oven to 400°.
- Mash pinto beans.
- Add sugar, syrup and unbeaten eggs.
- Beat together with a wooden spoon until sugar is dissolved.
- Stir in coconut.
- Pour into unbaked pie shell.
- Bake for 10 minutes at 400°, then turn down oven heat to 375° and bake another 20 minutes.
- Let cool before serving.
