Ingredients

  • 1/2 c. melted butter
  • 1/2 c. shortening
  • 2 c. brown sugar
  • 2 eggs
  • 1 tsp. soda
  • 4 c. rolled oats
  • 2 c. flour
  • 1 c. shredded coconut
  • 1 1/2 tsp. vanilla

Method

  • Mix brown sugar and shortening; add well beaten eggs and vanilla. Mix soda, rolled oats, flour and coconut together.
  • Add to first mixture. Shape into 2 long 3-inch rolls in wax paper. Refrigerate until firm. Slice in 1/4 inch thick slices. Place 2 inches apart on cookie sheet. Bake at 350° for 10 minutes. Makes 4 1/2 dozen.
