Ingredients

  • 2 1/2 c. self-rising flour
  • 1 c. brown sugar
  • 2 eggs
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 2 c. oatmeal (regular or quick)
  • 1/2 c. shortening
  • 1/2 c. butter
  • 1 c. white sugar
  • 2 tsp. vanilla
  • 1 c. chopped pecans
  • 1 c. coconut

Method

  • Sift flour, salt, baking powder and soda.
  • Stir in oats, cream, shortening and butter.
  • Add eggs, sugars and vanilla. Cream until fluffy.
  • Stir in dry ingredients; add pecans and coconut.
  • Mix well.
  • Chill dough.
  • Shape tablespoons of dough into balls.
  • Place 2 inches apart on greased cookie sheet.
  • Flatten with fork.
  • Bake at 350° for 12 to 15 minutes.
  • Makes 5 dozen cookies.
