Ingredients

  • 6 14 cups coconut milk
  • 1 12 cups sugar
  • 14 teaspoon salt
  • 2 14 cups rice flour
  • 34 cup cornflour
  • 34 teaspoon red food coloring

Method

  • Pour coconut milk into saucepan; warm over low heat.
  • Add sugar and salt; stir until dissolved.
  • Stir in rice flour and corn flour; mix well.
  • Filter batter through a fine strainer.
  • Divide mixture into 2 equal portions.
  • Add red food coloring to one portion.
  • Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer.
  • Allow 10-15 minutes cooking time per layer.
  • Leave to cool.
  • Cut in diamond shaped pieces.
