Ingredients

  • 1/2 c. packed brown sugar
  • 1/4 c. granulated sugar
  • 1/4 c. margarine or butter, softened
  • 1/4 tsp. vanilla
  • 1/4 tsp. cinnamon, ground
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1 c. all-purpose flour
  • 1 c. flaked coconut
  • 3/4 c. Fiber One cereal
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • butterscotch or chocolate chips (optional)

Method

  • Heat oven to 375°.
  • In a large bowl, cream together sugars and margarine.
  • Beat in vanilla and egg.
  • Stir in the remaining ingredients.
  • Shape dough into 1-inch balls.
  • Place on ungreased cookie sheet.
  • Flatten with fork dipped in sugar.
  • Bake 7 to 8 minutes or until light brown but not set.
  • Immediately remove from cookie sheet.
