Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 18 teaspoon salt
  • 1 egg, well beaten
  • 13 cup milk
  • 12 teaspoon orange rind, grated
  • 14 cup orange juice
  • 12 cup shredded coconut
  • confectioners' sugar
  • oil, for frying

Method

  • Sift first three ingredients together; combine egg and milk and add to dry ingredients.
  • Stir in orange rind and juice; add coconut and mix well.
  • Preheat oil to 360F; drop batter by spoonfuls into fat and fry until golden.
  • Drain on paper towels.
  • Sprinkle with confectioners sugar and serve.
