Ingredients

  • 4 pounds Frying Chicken, Cut Up
  • 1/4 cups Flour
  • 1/2 teaspoons Granulated Garlic
  • 18 teaspoons Cayenne Pepper
  • 1 cup Unsweetened Coconut, Finely Grated
  • 1 whole Egg, Beaten
  • 1/2 cups Butter

Method

  • Wash and dry chicken pieces.
  • Mix dry ingredients (except coconut) together.
  • Dip chicken pieces in the egg then roll in the coconut, then in the seasoned flour.
  • Melt butter in a baking dish large enough to hold the chicken pieces in one layer.
  • Arrange chicken in dish and bake at 375F for 40 -45 minutes until chicken is browned, tender and juices run clear.
