Ingredients

  • 2 1/4 c. sifted all-purpose flour
  • 1 c. firmly packed brown sugar
  • 3/4 c. granulated sugar
  • 3/4 c. vegetable oil
  • 3 tsp. cinnamon
  • 1 1/2 tsp. ginger
  • 1/2 tsp. salt
  • 1/2 c. chopped walnuts
  • 1 c. buttermilk
  • 1 egg, beaten slightly
  • 1 tsp. double-acting baking powder
  • 1 tsp. baking soda

Method

  • Combine flour, sugars, oil, 2 1/2 teaspoons cinnamon, ginger and salt; mix well.
  • Combine 1/2 cup flour mixture, walnuts and remaining 1/2 teaspoon cinnamon.
  • Set aside.
  • Add buttermilk, egg, baking powder and soda to remaining flour mixture.
  • Spread into greased 13 x 9 x 2-inch baking dish.
  • Sprinkle reserved nut mixture over top.
  • Bake in 350° gas oven 30 to 35 minutes.
  • Yield: 12 servings.
