- 2 1/4 c. sifted all-purpose flour
- 1 c. firmly packed brown sugar
- 3/4 c. granulated sugar
- 3/4 c. vegetable oil
- 3 tsp. cinnamon
- 1 1/2 tsp. ginger
- 1/2 tsp. salt
- 1/2 c. chopped walnuts
- 1 c. buttermilk
- 1 egg, beaten slightly
- 1 tsp. double-acting baking powder
- 1 tsp. baking soda
Method
- Combine flour, sugars, oil, 2 1/2 teaspoons cinnamon, ginger and salt; mix well.
- Combine 1/2 cup flour mixture, walnuts and remaining 1/2 teaspoon cinnamon.
- Set aside.
- Add buttermilk, egg, baking powder and soda to remaining flour mixture.
- Spread into greased 13 x 9 x 2-inch baking dish.
- Sprinkle reserved nut mixture over top.
- Bake in 350° gas oven 30 to 35 minutes.
- Yield: 12 servings.
