Ingredients

  • 6 Large jacket potatoes
  • 1 tbsp Plain flour
  • 1 tsp Chilli flakes
  • 1 tsp Paprika
  • 1/2 tsp pepper
  • 1/2 tsp Salt
  • 3 tbsp Vegetable oil

Method

  • Cut the potatoes in chunky wedges (leaving the skins on) and blanch them in salty water for 10 minutes.
  • Remove the potatoes and drain, leaving to cool.
  • Pre heat the oil in an oven proof dish.
  • In a large bowl, mix together the flour, salt, pepper, chilli and paprika. Toss in the potatoes and coat well.
  • add the potatoes to the pre heated dish and cover them in the oil and cook for a further 20-40 minutes until crispy and golden brown
