Ingredients

  • 1 1/2 c. (1-inch) pieces diced onion
  • 1 c. diced green bell pepper
  • 2 Tbsp. coarsely chopped jalapeno pepper
  • 3 cloves garlic, minced
  • 1 lb. freshly ground turkey
  • 2 (14 1/2 oz.) cans no-salt-added whole tomatoes (undrained), chopped
  • 1 (16 oz.) can pinto beans (undrained)
  • 1/2 c. frozen whole kernel corn
  • 2 Tbsp. chili powder
  • 1/4 tsp. ground red pepper
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt

Method

  • Coat a medium saucepan with vegetable cooking spray; place over medium heat until hot.
  • Add onion and green pepper; saute 1 minute.
  • Add jalapeno pepper and garlic.
  • Saute an additional 3 minutes or until onion is tender.
  • Add ground turkey; cook 5 minutes or until turkey is browned, stirring frequently.
  • Add chopped tomatoes and remaining ingredients; stir well.
  • Bring to a boil; reduce heat and simmer, uncovered, 20 minutes.
  • Yields 6 servings.
