Ingredients

  • 6 oz. boneless, skinless chicken breasts, cut into 1/2 inch cubes (about 1 c.)
  • 1 tsp. oil
  • 2 cans chicken broth
  • 1 c. water
  • 1 pkg. frozen mixed, thawed vegetables
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. pepper
  • 1 c. Minute original rice, uncooked
  • 1 Tbsp. chopped parsley

Method

  • Cook and stir chicken in hot oil in large saucepan until browned.
  • Add broth, water, vegetables, poultry seasoning and pepper.
  • Bring to boil.
  • Reduce heat; cover and simmer 5 minutes. Stir in rice and parsley; cover.
  • Remove from heat.
  • Let stand 5 minutes.
  • Makes 6 servings.
  • Recipe can be doubled.
