Ingredients
- 6 oz. boneless, skinless chicken breasts, cut into 1/2 inch cubes (about 1 c.)
- 1 tsp. oil
- 2 cans chicken broth
- 1 c. water
- 1 pkg. frozen mixed, thawed vegetables
- 1/2 tsp. poultry seasoning
- 1/4 tsp. pepper
- 1 c. Minute original rice, uncooked
- 1 Tbsp. chopped parsley
Method
- Cook and stir chicken in hot oil in large saucepan until browned.
- Add broth, water, vegetables, poultry seasoning and pepper.
- Bring to boil.
- Reduce heat; cover and simmer 5 minutes. Stir in rice and parsley; cover.
- Remove from heat.
- Let stand 5 minutes.
- Makes 6 servings.
- Recipe can be doubled.
