Ingredients

  • 1 lb. beef boneless round steak, cut into 3/4-inch pieces
  • 1 large chopped onion
  • 2 cloves garlic, finely chopped
  • 1 Tbsp. oil
  • 2 c. water
  • 1/4 c. snipped parsley
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. dried oregano
  • 1 can whole tomatoes (undrained)
  • 1 can condensed beef broth
  • 1 c. uncooked noodles
  • 1 medium green pepper, coarsely chopped

Method

  • Cook and stir beef, onion and garlic in oil until beef is done.
  • Stir in water, chili powder, salt, oregano, tomatoes and broth.
  • Heat to boiling.
  • Reduce heat.
  • Cover and simmer until beef is tender, about 1 1/2 to 2 hours.
  • Skim excess fat from soup.
  • Heat to boiling; reduce heat.
  • Stir in noodles and green pepper.
  • Simmer, uncovered, until noodles are tender.
  • Stir in parsley.
