Ingredients

  • 1 pkg. hash browns (or shredded baked potato)
  • 1 stick margarine
  • salt and pepper
  • 4 eggs (I use Eggbeaters for cholesterol free)
  • 1 can chopped green chiles
  • 1/2 chopped green pepper
  • 1/2 chopped onion
  • 1/2 chopped Polish sausage (I use turkey-fat free)
  • 1/2 c. chopped ham
  • 3/4 c. shredded cheese (cheddar or Monterey Jack)

Method

  • Mix hash browns, margarine, salt and pepper and press into 8 x 12 pan.
  • Bake at 400 until golden brown.
  • I do this the day before and store in refrigerator.
  • Combine remaining ingredients and pour into cooked hash brown crust.
  • Bake until eggs are set, about 20 minutes, in 375 degree oven.
