Ingredients

  • 1 sq. semi-sweet baking chocolate
  • 2 Tbsp. butter
  • 1/3 c. flour
  • 1 c. sugar
  • 1/4 tsp. salt
  • 2 1/2 c. milk, scalded
  • 3/4 tsp. vanilla
  • 3 eggs, separated
  • 1/3 c. sugar
  • 1 baked 8-inch pie shell

Method

  • Melt the chocolate and butter in a double boiler.
  • Mix the flour, sugar and salt; stir into chocolate.
  • Add the milk slowly, stirring constantly, until fully thickened, about 15 minutes. Beat the egg yolks well.
  • Stir in a little of the chocolate into the eggs; then return to the hot mixture and cook for 2 minutes, stirring constantly.
  • Remove from heat and cool partially.
  • Stir in vanilla.
  • Pour into pie shell.
  • Beat egg whites until soft peaks form; then add 1/3 cup sugar until stiff.
  • Swirl the meringue over the pie.
  • Bake at 350° for 5 to 10 minutes or until golden brown.
