Ingredients

  • 12 ounces fettuccine or 12 ounces tagliatelle pasta noodles
  • 1 teaspoon butter
  • 2 -3 tablespoons breadcrumbs
  • 12 teaspoon salt
  • 6 tablespoons butter
  • 3 12 cups confectioners' sugar
  • 4 egg whites
  • 4 egg yolks
  • 34 cup ground hazelnuts
  • 3 ounces semisweet chocolate
  • 4 tablespoons breadcrumbs
  • 12 teaspoon cinnamon
  • 3 teaspoons lemon zest (approx. 1 lemon)

Method

  • Bring a pan of salted water to a boil.
  • Add the pasta and cook for 6 minutes or according to package directions.
  • Drain, rinse with cold water, and set aside.
  • For the sauce, beat butter, half the sugar, and the egg yolks until frothy.
  • In another bowl, whisk the egg whites with half the sugar until stiff, then fold into the butter mixture.
  • In another bowl, mix the nuts, chocolate, bread crumbs, cinnamon, and lemon zest.
  • Add to the egg mixture.
  • Add to the pasta and mix gently.
  • Preheat oven to 400 degrees F. Grease an ovenproof dish with the butter.
  • Sprinkle with bread crumbs, spreading evenly to coat base and sides.
  • Pour pasta mix into the dish and bake for 25-30 minutes.
