Ingredients

  • 4 sqs. chocolate
  • 2 c. sugar
  • 1/2 teaspoon peppermint extract
  • 1 c. sliced almonds
  • 4 Large eggs
  • 1 c. butter
  • 1/4 teaspoon salt
  • 1 c. flour

Method

  • Base: Heat chocolate and butter in double boiler.
  • In large bowl beat Large eggs till frothy, stir in sugar and chocolate, add in extract.
  • Stir in flour, salt and almonds, mix thoroughly.
  • Pour on lined cookie sheet with foil and sprayed with Pam.
  • Bake at 350 degrees for 20 to 25 min.
  • Cold.
  • Filling: Mix sugar and butter, add in extract and coloring.
  • Spread proportionately over cooled cake base.
  • Chill to set.
  • Glaze: Heat chocolate in double boiler, add in butter till melted.
  • Dribble hot glaze by spoon onto cold hard filling.
  • Chill at least 5 min before cutting.
