- 1 frozen prepared pie crust
- 4 Tbsp. cornstarch
- 1 c. sugar
- 3 eggs, separated
- pinch of salt
- 3 Tbsp. sugar
- 3 Tbsp. butter
- 1/3 c. cocoa
- 1 1/4 c. milk
- 1 tsp. vanilla
- 1/8 tsp. cream of tartar
Method
- Let frozen pie crust thaw slightly.
- Prick all over with fork and bake according to package directions.
- In a double boiler, stir together butter, cornstarch, cocoa, sugar and half the milk.
- Heat mixture and slowly stir in the rest of the milk until well blended. Bring to a boil stirring often and boil for 1 minute.
- Beat egg yolks lightly in a small bowl.
- Stir some of the hot mixture into the yolks and add the yolks to the double boiler.
- It's important to add some of the hot mixture into yolks before hand, so they won't curdle.
