Ingredients

  • 1 frozen prepared pie crust
  • 4 Tbsp. cornstarch
  • 1 c. sugar
  • 3 eggs, separated
  • pinch of salt
  • 3 Tbsp. sugar
  • 3 Tbsp. butter
  • 1/3 c. cocoa
  • 1 1/4 c. milk
  • 1 tsp. vanilla
  • 1/8 tsp. cream of tartar

Method

  • Let frozen pie crust thaw slightly.
  • Prick all over with fork and bake according to package directions.
  • In a double boiler, stir together butter, cornstarch, cocoa, sugar and half the milk.
  • Heat mixture and slowly stir in the rest of the milk until well blended. Bring to a boil stirring often and boil for 1 minute.
  • Beat egg yolks lightly in a small bowl.
  • Stir some of the hot mixture into the yolks and add the yolks to the double boiler.
  • It's important to add some of the hot mixture into yolks before hand, so they won't curdle.
