Ingredients
- 3 cups milk
- 3 (1 oz.) squares unsweetened chocolate
- 1 1/2 cups sugar
- salt
- 2 1/2 Tbsp. cornstarch
- 2 Tbsp. flour
- 1 Tbsp. cocoa
- 3 egg yolks, slightly beaten
- 1 Tbsp. butter
- 1 1/2 tsp. vanilla
Method
- Heat milk and chocolate in saucepan until chocolate is melted.
- Stir occasionally.
- Combine sugar, salt, cornstarch, flour and cocoa in saucepan.
- Gradually stir in hot milk mixture. Cook over medium heat, stirring constantly until mixture thickens and reaches a boil.
- Boil one minute.
- Remove from heat.
- Stir in one cup of hot mixture into egg yolks.
- Return all egg yolks to saucepan and cook until it simmers and begins to thicken.
- Remove from heat and add butter and vanilla.
- Pour into baked crust.
- Top with Italian meringue.
