Ingredients

  • 3 cups milk
  • 3 (1 oz.) squares unsweetened chocolate
  • 1 1/2 cups sugar
  • salt
  • 2 1/2 Tbsp. cornstarch
  • 2 Tbsp. flour
  • 1 Tbsp. cocoa
  • 3 egg yolks, slightly beaten
  • 1 Tbsp. butter
  • 1 1/2 tsp. vanilla

Method

  • Heat milk and chocolate in saucepan until chocolate is melted.
  • Stir occasionally.
  • Combine sugar, salt, cornstarch, flour and cocoa in saucepan.
  • Gradually stir in hot milk mixture. Cook over medium heat, stirring constantly until mixture thickens and reaches a boil.
  • Boil one minute.
  • Remove from heat.
  • Stir in one cup of hot mixture into egg yolks.
  • Return all egg yolks to saucepan and cook until it simmers and begins to thicken.
  • Remove from heat and add butter and vanilla.
  • Pour into baked crust.
  • Top with Italian meringue.
