Ingredients

  • 1/4 cup light soft brown sugar
  • 2 tbsp sunflower oil
  • 2 tbsp maple syrup
  • 2 oz dark chocolate, chopped
  • 1 cup steel cut oats
  • 1 cup puffed rice cereal
  • 1 tbsp cocoa powder
  • 1/4 tsp ground cinnamon
  • 1/4 cup sliced almonds
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup dried figs, chopped

Method

  • Place the sugar and 1/4 cup of water in a medium pan. Heat gently, stirring until the sugar has dissolved. Remove the pan from the heat and stir in the oil, maple syrup and chocolate and stir until the chocolate has melted. Preheat the oven to 325°F.
  • Mix the oats, puffed rice, cocoa powder, cinnamon and half the almonds in a large bowl and add chocolate syrup. Stir thoroughly with a wooden spoon. Spread the mixture onto a large baking sheet lined with parchment paper. Bake for 35-40 mins, turning the mixture after 10 mins.
  • Remove from the oven and leave to cool completely, add the cranberries, figs and remaining sliced almonds. Store in clean jars in a cool dry place.
