Ingredients

  • 8 scoops Carte D'Or Vanilla Ice Cream 200g/400ml
  • 5/8 cup dark chocolate
  • 3 3/4 tablespoons dark chocolate chips
  • 3 3/8 tablespoons dark rum
  • 1/2 ounce chopped hazelnuts toasted

Method

  • Scoop the Carte D'Or Vanilla Ice Cream into a bowl and mash with the back of a spoon.
  • Mix in the dark chocolate chips.
  • Place tablespoons of the Carte D'Or Vanilla Ice Cream mixture on a baking sheet covered with baking parchment and mould with the back of the spoon into circles or shapes.
  • Return the ice cream islands back to the freezer for 1 hour.
  • Melt the dark chocolate in a bowl over a pan of simmering water.
  • Pour in the rum, the chocolate will thicken.
  • Serve 2 or 3 islands per person, topped with the chocolate rum sauce and sprinkled with the toasted chopped hazelnuts.
