Ingredients

  • 3 tablespoons baking cocoa
  • 2 tablespoons chopped chipotle peppers in adobo sauce
  • 4 teaspoons Worcestershire sauce
  • 2 teaspoons brown sugar
  • 1/2 teaspoon salt
  • 1-1/2 pounds beef top sirloin steak

Method

  • Place the first five ingredients in a blender; cover and process until blended. Rub over beef. Cover and refrigerate for at least 2 hours.
  • Grill beef, covered, over medium heat or broil 4 in. from the heat for 8-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).
