Ingredients

  • 1 None 9-inch frozen pie crust, thawed
  • 4 oz milk chocolate, chopped
  • 1/2 cup milk
  • 2 tbsp Irish cream liqueur
  • 2 None eggs
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • None None Unsweetened cocoa powder, to dust
  • None None Whipped cream, to serve (optional)

Method

  • Preheat the oven to 375°F. Prick the pie crust with a fork. Place on a baking pan. Bake 10 mins. Cool 10 mins.
  • Reduce oven temperature to 325°F.
  • Meanwhile, place chocolate, milk and liqueur in a small saucepan on low heat. Stir for 2-3 mins until smooth. Cool slightly.
  • Whisk eggs, sugar and vanilla in a medium bowl. Gradually whisk in milk mixture. Pour into pie crust.
  • Bake 25-30 mins until custard is just set. Cool to room temperature. Refrigerate for at least 2 hours before serving. Dust with cocoa and serve with whipped cream, if desired.
