Ingredients

  • Turkey Meat Loaf
  • 2 Tbsp. olive oil
  • 1 qt. yellow onions, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1 cup canned chopped green chiles, drained
  • 1 cup canned roasted red peppers, finely chopped
  • 2 Tbsp. dehydrated minced garlic
  • 1 Tbsp. ground black pepper
  • 1-1/2 tsp. Kosher salt
  • 1-1/2 tsp. ground cumin
  • 1 tsp. paprika
  • 3/4 tsp. chili powder
  • 1/4 tsp. ground red pepper (cayenne)
  • - ground turkey
  • 3 each eggs, lightly beaten
  • 3 cups panko (Japanese-style bread crumbs)
  • BBQ Sauce
  • 3 Tbsp. canned chipotle peppers in adobo sauce
  • 1 cup OPEN PIT Original Restaurant Recipe Barbecue Sauce
  • 1/2 cup brown sugar, firmly packed

Method

  • Turkey Meatloaf: Saute onions in hot oil in large skillet (or in medium skillet for trial recipe) on medium-high heat 2 min.
  • or until onions are tender.
  • Add chilies, roasted red peppers and seasonings; stir until blended.
  • Cook 5 min., stirring frequently.
  • Cool 10 min.
  • Combine eggs and turkey in large bowl (or medium bowl for trial recipe).
  • Gradually add bread crumbs, stirring gently after each addition until well blended.
  • Add vegetable mixture; mix lightly.
  • Let stand 15 min.
  • Spray 2-inch full hotel pan (or 1/4 hotel pan for trial recipe) with cooking spray.
  • Shape turkey mixture evenly into 4 loaves (or 1 loaf for trial recipe); place in prepared pan, leaving spaces between loaves.
  • Bake in 375F-standard oven for 30 min.
  • BBQ Sauce: Meanwhile, place chipotle peppers in adobo sauce in food processor container; cover.
  • Process until smooth.
  • Add barbecue sauce and brown sugar; cover.
  • Process until well blended.
  • Remove meatloaves from oven; brush evenly with the barbecue sauce mixture.
  • Bake meatloaves an additional 15 to 20 min.
  • or until cooked through (160F).
  • Let stand 10 min.
  • before cutting each meatloaf into 6 slices.
