Ingredients

  • 5 (7-8" long) cucumbers, about 2 3/4 lbs.
  • 1/2 teaspoon salt
  • 6 scallions, chopped
  • 1/2 cup chopped fresh parsley
  • 1 Tablespoon chopped fresh dill
  • 1 quart buttermilk
  • 2 cups low-fat greek yogurt
  • 1/4 cup lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • Garnish - thinly sliced cucumber

Method

  • Peel cucumbers. Cut in half lengthwise & remove seeds. Place cucumber shells on a paper towel; sprinkle 1/2 tsp salt evenly over cucumbers. Let stand 30 minutes. Drain and coarsely chop.
  • Combine cucumber, scallions and next 7 ingredients. Place 1/3 of mixture into blender; process 1 minute or until smooth. Pour into a 3 quart container. Repeat procedure twice with remaining mixture. Cover and chill at least 3 hours. Garnish if desired
