Ingredients

  • 1 lb. ground beef or ground turkey
  • 2 medium onions, chopped
  • 1 c. green pepper, chopped
  • 2 Tbsp. oil
  • 2 cans tomato sauce
  • chili powder to taste
  • salt to taste
  • 2 large cans red kidney beans (undrained)
  • dash of pepper

Method

  • In Dutch oven or a large kettle, saute onion and green peppers in oil for 5 minutes or until soft.
  • Stir occasionally.
  • Add beef or turkey; cook slowly until lightly browned.
  • Stir often, breaking meat apart.
  • Add in tomato sauce and remaining seasonings.
  • Cook tightly covered over low heat for about 20 minutes.
  • Add beans; stir well.
  • Simmer uncovered for 20 to 25 minutes.
  • Serve over cooked rice or use for another favorite, chili dogs.
