Ingredients

  • 2 cans (7 oz.) whole chilies, mild green
  • 1 lb. shredded Cheddar cheese
  • 1 lb. shredded Jack cheese
  • 1 small can evaporated milk
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 4 eggs, separated
  • 3 Tbsp. flour

Method

  • Seed and rinse chilies.
  • Spread 1/2 of the chilies in a 9 x 13-inch baking dish.
  • Put
  • Cheddar
  • cheese
  • on top.
  • Layer the rest of the chilies and then the Jack cheese on top.
  • Beat egg whites until stiff.
  • Mix
  • the
  • remaining
  • ingredients
  • and fold into stiff egg whites.
  • Pour
  • over
  • chili
  • and
  • cheese in baking dish.
  • Bake at 325°
  • for 45 minutes.
  • Great for brunches.
