Ingredients
- 2 cans (7 oz.) whole chilies, mild green
- 1 lb. shredded Cheddar cheese
- 1 lb. shredded Jack cheese
- 1 small can evaporated milk
- 1 clove garlic, minced
- salt and pepper to taste
- 4 eggs, separated
- 3 Tbsp. flour
Method
- Seed and rinse chilies.
- Spread 1/2 of the chilies in a 9 x 13-inch baking dish.
- Put
- Cheddar
- cheese
- on top.
- Layer the rest of the chilies and then the Jack cheese on top.
- Beat egg whites until stiff.
- Mix
- the
- remaining
- ingredients
- and fold into stiff egg whites.
- Pour
- over
- chili
- and
- cheese in baking dish.
- Bake at 325°
- for 45 minutes.
- Great for brunches.
