Ingredients

  • 7 ounces chocolate minimum 70 % chocolate solids
  • 7/8 cup butter
  • 3/4 cup sugar
  • 5 eggs
  • 2 tablespoons flour
  • 1 pinch salt
  • 1/4 teaspoon allspice or Jamaican pepper
  • 1/2 teaspoon ground chili

Method

  • Line a springform cake tin (21 centimeters) with parchment paper or grease well with butter. Set aside.
  • Preheat the oven to 180C.
  • Break up the chocolate and butter into small pieces and place in a microwaveable bowl.
  • Melt the chocolate and butter in the microwave on medium, stopping every minute to stir.
  • Add the sugar and allow to cool.
  • Add the eggs, one at a time, while stirring continuously.
  • Add the flour, salt, allspice, and chili. Stir with a spatula and mix well.
  • Place into the cake tin and bake for 25 minutes. (The center will appear slightly soft.)
  • Serve warm and sprinkled with cocoa powder.
  • Alternatively, sprinkle with a mixture of cocoa powder and chili.
