Ingredients

  • 1 tablespoon vegetable oil
  • 2 medium onions, chopped
  • 2 fresh green hatch chilies
  • 4 large potatoes, peeled and diced
  • boiling water
  • salt

Method

  • Saute onions until tender.
  • Add green chiles.
  • Add diced potatoes.
  • Mix thoroughly.
  • Add boiling water to cover, cook down until potatoes are tender and creamy.
  • Add salt to taste.
  • Cooked potatoes my be used in place of raw potatoes, but only add a small amount of water to the mixture.
