Ingredients
- 8 oz. Jack cheese
- 5 eggs
- 1 c. cottage cheese
- 1/4 c. margarine, melted and cooled
- 1/4 c. unsifted flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 (4 oz.) can diced Ortega chiles, drained
Method
- Shred Jack cheese.
- Beat eggs thoroughly.
- Add cottage cheese and margarine.
- Mix well.
- Add flour, baking powder and salt and mix.
- Add shredded cheese and chiles and stir to blend.
- Pour into a greased 8-inch square baking pan.
- Bake in a 350° oven for 35 minutes or until edges are lightly browned and center appears firm.
- Makes 6 to 8 servings.
