Ingredients

  • 8 oz. Jack cheese
  • 5 eggs
  • 1 c. cottage cheese
  • 1/4 c. margarine, melted and cooled
  • 1/4 c. unsifted flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 (4 oz.) can diced Ortega chiles, drained

Method

  • Shred Jack cheese.
  • Beat eggs thoroughly.
  • Add cottage cheese and margarine.
  • Mix well.
  • Add flour, baking powder and salt and mix.
  • Add shredded cheese and chiles and stir to blend.
  • Pour into a greased 8-inch square baking pan.
  • Bake in a 350° oven for 35 minutes or until edges are lightly browned and center appears firm.
  • Makes 6 to 8 servings.
