Ingredients

  • 1 (10 oz.) pkg. frozen broccoli
  • 1 c. uncooked brown rice
  • 2 (6 oz.) whole chicken breasts, skinned and boned
  • 1/4 c. onion, chopped
  • 1 Tbsp. margarine
  • 1/4 tsp. garlic powder
  • 2 medium tomatoes, cut into wedges

Method

  • Thaw broccoli.
  • Prepare rice according to package directions, except don't use margarine and cook for half the time (do not drain).
  • Cut chicken into 1/2-inch strips.
  • In nonstick skillet over medium heat, cook chicken strips and onion in margarine. Stir continuously for 3 to 5 minutes.
  • Add the rice and its cooking water.
  • Add broccoli and garlic.
