Ingredients
- 1 (10 oz.) pkg. frozen broccoli
- 1 c. uncooked brown rice
- 2 (6 oz.) whole chicken breasts, skinned and boned
- 1/4 c. onion, chopped
- 1 Tbsp. margarine
- 1/4 tsp. garlic powder
- 2 medium tomatoes, cut into wedges
Method
- Thaw broccoli.
- Prepare rice according to package directions, except don't use margarine and cook for half the time (do not drain).
- Cut chicken into 1/2-inch strips.
- In nonstick skillet over medium heat, cook chicken strips and onion in margarine. Stir continuously for 3 to 5 minutes.
- Add the rice and its cooking water.
- Add broccoli and garlic.
