Ingredients

  • 1 c. yellow cornmeal
  • 1/2 c. oat bran
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. cumin
  • 1/8 tsp. chili powder
  • 1/4 c. margarine
  • 1 c. plus 2 Tbsp. chicken broth
  • 8 oz. boneless, skinless chicken breast, cooked and chopped fine
  • 1/2 c. tomato sauce
  • 4 Tbsp. canned chopped green chilies, divided
  • 1 pt. cherry tomatoes, chopped
  • 1/4 c. each: chopped cilantro and onion
  • 1 Tbsp. fresh lime juice

Method

  • Process cornmeal, oat bran, baking powder, salt, cumin, chili powder and margarine in food processor until blended.
  • With machine running, pour in broth; process until blended.
  • Let stand 20 minutes.
  • Combine chicken, tomato sauce and 2 tablespoons chilies in small bowl.
