- 1/4 c. orange juice
- 1 1/2 Tbsp. cornstarch
- 1 lb. skinless, boneless chicken breasts, cut into strips
- 3/4 c. chicken broth
- 1 1/2 Tbsp. soy sauce
- 2 1/2 tsp. vegetable oil
- 1 clove garlic, minced
- 1 1/2 tsp. ground ginger
- 1 1/2 c. snow peas or green beans
- 1 medium red bell pepper, cut into thin strips (about 1 c.)
- 3/4 c. sliced green onion
- 2 c. cooked white rice
Method
- In a shallow glass bowl, combine orange juice and cornstarch; mix well. Stir in chicken. Cover bowl with plastic wrap and refrigerate for 2 hours. Drain chicken; discard juice mixture.
