Ingredients

  • 1 (4 to 5 lb.) hen or fryer
  • 1/2 c. chicken fat
  • 1 pod garlic
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. Season-All or seasoned salt
  • 2 tsp. chili powder
  • 1 c. celery, chopped
  • 1 bell pepper, chopped
  • 1 can Italian tomatoes
  • 1 can tomato sauce
  • 1 tsp. celery salt
  • 1 bay leaf
  • 1 onion, chopped
  • 1 c. grated cheese
  • salt and pepper to taste

Method

  • Simmer hen or fryer with bay leaf, salt and pepper.
  • Pull meat off bones (skim off fat).
  • Melt fat in skillet; add chopped vegetables and cook until tender.
  • Add other seasonings, tomatoes, tomato sauce and chicken and simmer a few minutes.
  • Cook spaghetti and drain (I cook it in my broth).
  • Put all ingredients in a casserole dish and add enough broth to make moist.
  • Sprinkle with cheese and bake at 350° for 30 minutes or until hot.
