Ingredients

  • 5 c. cooked chicken, diced or shredded
  • 2 Tbsp. salad oil
  • 2 Tbsp. orange juice
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 3 c. cooked rice
  • 1 1/2 c. small green grapes
  • 1 1/2 c. sliced celery
  • 1 (13 1/2 oz.) can pineapple chunks, drained
  • 1 (11 oz.) can mandarin oranges, drained
  • 1 c. slivered almonds
  • 1 1/2 c. mayonnaise

Method

  • Combine chicken, salad oil, orange juice, vinegar and salt. Let stand while preparing remaining ingredients.
  • Toss all ingredients together and serve.
